Quick Snacks: Stuffed Date Bites

Need a quick, wholesome pick-me-up that will satisfy your sweet tooth without the sugar crash? Raw pecans and dates come together in these rich, chewy protein-packed bites that are ridiculously easy to make and even easier to eat.



Stuffed Date Bites

This deliciously simple snack is a mighty morsel of portable energy. It combines the intense sweetness of dates with the creaminess of pecans. Wrap these bites in waxed paper or plastic wrap and take them with you to serve as portable energy treats. Consider it a nice tidy package with nutritional punch!

Ingredients:
12 Medjool or your favorite moist, large dates
12 large raw pecans

Directions:

  1. Slice each date lengthwise and remove the pit. Insert a pecan into the center of the date and press to seal closed so you have a date-pecan sandwich.
  2. For the best flavor, store the bites in a tightly sealed container in the refrigerator for no more than 4 weeks or at room temperature for no more than 2 weeks.

Yield: 12 servings

A good source of: antioxidants, calcium, magnesium, phosphorus, iron, zinc, copper, manganese, potassium, protein, vitamin B and E, natural sugars, fiber, and healthful fat
